- Abstract
The article presents a cross-sectional study which examines the risk of allergic sensitization to wheat flour and enzymes and associated respiratory symptoms among bakers in Great Britain. This study was conducted on 225 workers potentially exposed to flour dust in British bakeries in order to identify the predictors of sensitization to wheat flour and enzymes. Results show the need to combine health surveillance and exposure control among these bakers in order to prevent workplace sensitization.
