- Abstract
This study aimed the developing of mixed beverages ready to drink from mango, cashew apple and passion fruit enriched with different prebiotics. Three formulations of mixed beverages, with different prebiotic ingredients (standard inulin, inulin HP and fructooligosaccharides), and one without prebiotics were studied. The formulations were submitted to the chemical and physicochemical characterization (pH, acidity, soluble solids, sugar content, total soluble solids and total acidity ratio, vitamin C, carotenoids, phenolic compounds and color) and sensory evaluation of acceptance (sweetness, flavor, global impression and purchase intent). The contents of sugars, vitamin C, total polyphenols and the color differed significantly among the formulations studied, but this difference was not observed for pH, acidity and total carotenoids. The formulation containing standard inulin showed a higher sensory acceptability when compared to the other formulations.
