Abstract

Black elderberry (Sambucus nigra L.) is one of the most used herbal plants in the world. In folk medicine, its raw materials were used primarily as a diaphoretic, antipyretic and diuretic remedies. Nowadays, the antibacterial, antiviral, antidepressant, antitumor and hypoglycemic properties as well as lowering the concentration of fat and lipids of elderberry extracts have also been proven. The chemical composition of elderberry flowers and fruits is variable and depends on many factors (genetic, ontogenetic, environmental, post-harvest). Elderberry flowers contain flavonoids, phenolic acids, essential oil, organic acids, sugars and minerals, while the fruit, apart from the same, is dominated by anthocyanins. The rich chemical composition of elderberry raw materials and their strong biological activity create great possibilities of application in pharmaceutical, food and cosmetic production.
