- Abstract
Foods may contain hazards of different natures that affect their integrity and pose risks to public health. In this context self-control programs and official sanitary inspection carried out in establishments of animal products aims to identify such hazards and prevent inappropriate food from being consumed, such as the physical hazard represented by the presence of firearm projectiles in beef. The lack of information on the occurrence of these projectiles in beef is highlighted, and reports of this nature are restricted to game meat or related to the injury caused in animals such as dogs and cats. The aim of this study was report two cases, one involving masseter and pterygoid muscles of a bovine during post mortem inspection in a slaughterhouse in the Southwest region of Parana and the other during the consumption of a cooked beef product in a restaurant in the Western region, in the same state. Don't identify the case of the cooked product may represent a limitation of sanitary inspection about unconventional anatomical regions and depths, or the possible recovery of the animal prior to ante mortem inspection. More studies are needed to determine the actual occurrence of these findings in products of animal origin, which makes it possible to adopt measures that assist in its prevention and control.
