- Abstract
The article discusses the health benefits and hazards of pasteurized milk. Pasteurization is the process of heating food to achieve a significant reduction in any microbiota present. A study that adds to the small but growing body of evidence that consumption of unpasteurized milk is another factor mediating a protective effect on allergic disorders. Unpasteurized milk consumption shares with the broader farming literature a heterogeneity in the effects that have been observed.
