- Abstract
The article presents a research which aims to investigate the conversion of deoxynivalenol (DON) to 3- acetyldeoxynivalenol in barley-derived ethanol co-products with trichothecene 3-O-acetyltransferases expressing yeast. In this study, two trichothecene 3-O-acetyltransferases (FgTRI101 and FfTRI201), derived from Fusarium graminearum, were cloned and expressed in Saccharomyces cerevisiae ethanol fermentations using barley. It is stated that the study demonstrates the potential of using a trichothecene 3-O-acetyltransferase expressing yeast to modify (DON) during commercial bioethanol fermentation.
