- Abstract
The article presents a study which characterizes the volatile compounds of fresh and cooked Astraeus species (spp.). The study uses a closed-looped splitting system (CLS) coupled with gas chromatography-mass spectrometry (GC-MS) to identify the volatile compounds and examines the correlation between the fatty acid metabolism and the production of alipathic eight-carbon (C8). Accordingly, C8 compounds were identified as the main volatile compounds in fresh Astraeus spp.
