- Abstract
Background: Contaminated foods are the leading causes of disease in humans within these foods the chicken egg is one of the main components of human nutrition, and not being handled properly and sanitary measures to ensure its quality, can become a transport of diseases caused by bacteria such as: Salmonella, Escherichia coli, Enterobacter cloacae y Enterobacter sakazakii. Objectives: Through this research process sought to determine the mesophilic aerobic heterotrophic bacterial microbiota present on the surface of chicken eggs expended in a popular market Campo Elias municipality, Merida State, Venezuela. Methods: We collected randomly, a total of 24 chicken eggs. The samples were processed by applying a sterile swab, previously wetted with a solution of sterile nutrient broth, which was applied on the surface of each of the eggs. Subsequently serial dilutions and plated on Petrifilm (3M) media to heterotrophic bacteria were performed. They were incubated at a temperature of 37 ° C for 48 hours. After the incubation were isolated and purified colonies and underwent their identification by biochemical tests according to the schemes proposed byMacFaddin (2003), supplemented with tests galleries API (BioMeriaux). Results: was possible to isolate and identify a total of 30 bacterial strains belonging to the genera Enterobacter spp. (40%), Escherichia coli (20%), Salmonella arizonae (20%) and Aeromonas hydrophila (20%). Conclusions: it could isolate and identify a large group of pathogenic bacteria which makes it necessary that measures be established hygienes during handling, storage and expended, so as to minimize the risk of disease outbreaks.
