- Abstract
Background: intoxications caused by Staphylococcus aureus coagulase positive have high frequency in Colombia. Places where outbreaks have been reported by consumption of contaminated food are mainly restaurants, homes and sites of great concentration (colleges, schools, children's homes). It is known that one of the groups at highest risk is the child population is considered vulnerable. In the department of Tolima are not reports of the presence of this pathogen in food and manipulators. Objectives: To diagnose the prevalence of positive coagulase Staphylococcus aureus in food and manipulators of school restaurants of commission of the ICBF, rural and urban schools in nine populations located in the south of the Tolima, with the purpose of knowing the state of basis of this pathogen and formulate corrective measures thus minimizing the risk of poisoning by this pathogen. Methods: Of the nine selected municipalities have been sampled San Antonio, Planadas, Roncesvalles, chaparral and Ortega, where they have been collected 88/216 samples, distributed between food 56/162 of raw material, prepared foodstuffs and 32/54 samples of manipulators (smear of hands and nose). The distribution sample was defined in function to previously prevalence's referenced, for the isolation of this microorganism is applied the protocol established by the INVIMA and the norm 6888-2 (Staphylococcus aureus coagulase positive). The data of the BPM and microbiological results will be analyzed with Epiinfo Program, which will make it possible to identify the risk factors and be able to generate the control measures for this pathogen. Results: it was observed a prevalence in food samples of 25% and in samples of handles the 12.5% for Staphylococcus aureus coagulase positive. Conclusions: It was detected the presence of this pathogen in food and food manipulators of the restaurants evaluated, thus exhibiting the inadequacy of the quality of the food where the food handlers are not the main direct source of contamination, probably was presented by exogenous factors or environmental.
