- Abstract
The polycatechins in tea polyphenols can be degraded into catechins by Aspergillus niger under certain conditions. When tea polyphenol concentration was 8 g/L and initial pH was 5.5 in the medium, inoculum volume was 6% (v/v), culturing the strain for 60 h at 30 °C,the maximum yield of the catechins was 26.89%. The results could provide some references for understanding the biodegradation of plant polyphenols and fine applications of tea polyphenols.
