- Abstract
This study was conducted to evaluate the effects of breeds (Duroc, $ x Taiwanese KHAPS Black Pigs,(?), sex difference on carcass cutability weight and percmtage and meat quality traits which were extracted from Longissimus dorsi muscles. A total of 24 pigs were selected which in the finishing period with an average weight of 78 kg. The. KHAPS crossbred black pigs were divided randomly into two groups that were given same diets. The diets were formulated into iso-nitrogen and iso-energetic. Animals were allowed to access feed and clean water ad libitum. The results showed that the fat content of Longissimus dorsi in barrows was significantly (P < 0.05) greater than the gilts. Compared with gilts, barrows had significantly higher (P < 0.05) changes of myofibrillar fragmentation index (MFI) in psoas major muscles in day 2. In addition, the firmness and marbling scores in the Longissimus dorsi were significantly higher (P < 0.05) in barrows than those gilts. The firmness score and marbling score of the barrows was significantly higher than gilts (P < 0.05). The fatty acid composition of Longissimus dorsi muscle results showed that the Ci4:o、 Ci6:i and SFAof the barrows were significantly higher than gilts (P < 0.05). Gilt had significantly higher C1&2, PUFA, PUFA/SFAratio and Iodine value than barrows (P < 0.05).
