- Abstract
The article focuses on a research related to the investigation of ultrasound-assisted extraction process and influence of extraction conditions on the quality of extracts obtained from Mesembryanthemum edule shoots. The M. edule shoots are collected from an arid bioclimatic zone of Djerba, Tunisia to experiment on the extraction procedure in an ultrasonic bath. The research analyzed the effect of methanol and ethanol solvents and extraction time of both solvents on the behalf of their phenolic content and antioxidant activity of the plant extract. The research concluded that the antioxidant activity of Mesembryanthemum edule is influenced by the property of the extracting solvents and the duration of sonication extraction.
