- Abstract
This work features the organization of the lexicon from The Valle Central gastronomy through the usage of an ontological formalism. This was achieved, firstly, by the gathering of the lexicon from the traditional gastronomy which is transmitted from one generation to another one, and is associated with a specific region that contains intercultural elements. Secondly, from the lexicon gathered, lexical categories, in which that lexicon is structured, were established. There are two types of relations: meronymic and hyponymic. And, they were used in order to explain the ontological formalism. Those relations allow the inclusion of minor classes into other ones through the topdown process. Finally, those meronymic and hyponymic relations were formalized applying a rigid ontology under the Basic Formal Ontology (Smith, 2014) postulates; the ones which stablish that every ontology has a relation of the type is_a (es_un). All of this has the objective of making a field's specialized information more accessible. The Valle Central gastronomy ontology includes six categories for the hyponymic relations among meronyms (ingredients) and eleven categories for the hyponymic relations among dishes.
