- Abstract
The article examines Spanish popular notions concerning health food and eating, or correct food, through an analysis of Spanish handbooks dealing with domestic economy. The authors discuss the gradual incorporation of scientific knowledge concerning food and eating practices into these handbooks, with a focus on discussions of vitamins. An increase in girls' school attendance is related to the transition to correct food practices in Spain. The handbooks' eventual focus on nutritional science is detailed, as are the effects of the Spanish Civil War on the quality of these books.
