- Abstract
The article explores the discovery and characterization of super soft kernel texture trait in wheat. The study indicates the minimal impact of near-infrared (NIR) hardness and that it is associated to the yield of superior break flour in milling. It stresses the potential contribution of NIR hardness in enhancing the quality of the cake. It also notes the opportunities provided by the trait with the wheat breeders in the modification of end-use wheat quality.
