The effect of polyphenols from Coix seed on anti-oxidization and inhibition of nitrosation.

- Abstract
Four different methods including DPPH radical scavenging, ABTS+ radical scavenging, hydroxyl radical scavenging and reducing power were used for evaluating the antioxidant activities of Coix seed polyphenols. The rates of scavenging nitrite and blocking nitrosamine were determined by ultraviolet spectrophotometry. The results showed that Coix seed polyphenols presented potential antioxidant activity and could effectively eliminate nitrite, block the nitrosamine synthesis. Moreover, with the concentration increasing, the corresponding index increased significantly in a dose-dependent manner. The half inhibitory concentration (IC50) of radical scavenging activity for DPPH, ABTS+ and hydroxyl radical were 0.037mg/mL, 0.005mg/mL and 0.09mg/mL, respectively. The IC50 of scavenging rate for nitrate and blocking rate of nitrosamine were 0.34mg/mL and 0.13mg/mL respectively. As a good antioxidant and nitrosamine inhibitor, Coix seed polyphenols could become a good food additive with great application potential.
