The article presents the author's views on the moulds that are used for shaping the jellies and flummeries. Various materials that were earlier used on the place of moulds includes egg shells, lemon peels, dishes, wine glass and pastry cases. Author further discusses use of wooden or tin moulds before the launch of stoneware moulds in 1740 which are exhibited in the Birmingham Museum and Art Gallery, Birmingham, England.
