- Abstract
Inonotus obliquus polysaccharide was used as raw material, supplemented with sucrose, citric acid, sodium carboxymethyl cellulose, xanthan gum and compound vitamin base material. The response surface method was used to optimize the processing technology of Inonotus obliquus polysaccharide compound sports drink. Fenton reaction method, pyrogallol autooxidation method, and 1, 1-diphenyl-2-trinitrophenylhydrazineDPPH colorimetric method were used to determine the scavenging ability of Inonotus obliquus polysaccharide compound drink on hydroxyl radical (· OH, superoxide anion (O2-), and DPPH, respectively. The optimum technological conditions were as follows : 2.1% of Inonotus obliquus polysaccharide, 6.0% of sucrose and 0.15% of citric acid, and 0.10% compound stabilizer. The drink prepared with the optimum conditions above, had bright color, moderate sweetness and acidity, and smooth taste. The antioxidant test showed that the scavenging rates of 1mL Inonotus obliquus polysaccharide compound drink on · OH, O2- and DPPH · were 52.13%, 40.26%, and 36.23% respectively. It showed that Inonotus obliquus polysaccharide compound sports drink had good antioxidant activity. The study provides a theoretical basis for the products development and more applications of Inonotus obliquus.
