- Abstract
The kosher market is become a commercial niche since few years, knowing a tremendous growth. Taking into account the new opportunities of business and of profit, professionals of the food sector are encouraged by various reports to label their products. This paper aims at contributing to the understanding of this dynamics. Principles of kashrut are presented, with an analysis of the various conditions and modalities of the certification procedures. Results of a socio-anthropologic research are exploited, in order to : i) examine what founds here, in the imaginary of consumers, the perception of a positive differential, given by the label, in terms of food quality and security ; ii) highlight some factors which could have negative impacts on the kosher market trajectory.
