- Abstract
Cobalt (Co)-60 was used to irradiate dried Auricularia heimuer to study effects of irradiation on the quality of A. heimuer through measuring its rehydration performance, hardness, polysaccharide solution viscosity, and observing its microstructure, NMR spectrum, and infrared spectrum. The results showed that the water absorption ratio of dried A. heimuer was positively correlated with irradiation dose within the tested range, while hardness was negatively correlated with irradiation dose. The water absorption and the hardness of A. heimuer treated with 10 kGy Co-60 were 1.6 times and 11% of A. heimuer without any irradiation, respectively. Low-field nuclear magnetic resonance analysis indicated that irradiation treated A. heimuer had increased water freedom, decreased bound water ratio, and increased immobilized water and free water ratio after rehydration. The microstructure of A. heimuer after rehydration showed broken middle layer, disordered medulla hyphae, thinner zona compacta, and thicker zona subcompacta. There was no significant alteration on the characteristic infrared absorption peaks of A. heimuer between irradiation treated samples and the control. Intensities of these peaks remained the same under an irradiation dose up to 3 kGy, but decreased with shifted peak position when irradiation dose was greater than 5 kGy. The viscosity of A. heimuer polysaccharide solution decreased with increased irradiation dose.
