- Abstract
This study aimed to evaluate good practices in food security in a food and nutrition service (FNS) of Military Organization placed in the city of Belém, state of Pará, applying a check list adapted from the Decree Order 854/SELOM. More than 157 items were evaluated and subdivided in 5 categories. The alternatives for each item were: (1) Yes, when it was in accordance; (2) No, when it was not in accordance and (3) When it does not apply. The FNS was also classified according to the scoring criteria of the Decree Order: (Group 1) 76 to 100%; (Group 2) 51 to 75%; and (Group 3) 0 to 50%. The percentages of non-accordance were: construction and installations 26%; equipments, furniture and tools 14%; manipulators 29%; production and transportation of food 31%; and documentation 47%. The FNS was rated as group number 2, attending 66% of accordance. Although the results showed that the major part of the evaluated items are in accordance, it was also noticed a high frequency of non-accordance. This leads us to the need for a quality control measure, in order to contribute to the improvement of the quality of the produced meals.
