The author reflects on the campaign of the Center for Science in the Public Interest against partially hydrated oil in the U.S. The organization aimed to reduce the incidence of heart disease in the country by giving a formal petition to the Food and Drug Administration against the use of oil in food ingredients. The substance has been known to be saturated fat that is capable of thickening cardiac blood vessels leading to heart ailments.
