- Abstract
The RUTF (Ready to Use Therapeutic Food) product is one of the alternative products recommended by WHO and UNICEF to be given to children under five years who have severe acute malnutrition. In the development of RUTF products, it is necessary to consider acceptability, nutritional quality, including the protein quality of the product. This study aims to analyze the protein quality of Ready to Use Therapeutic Food (RUTF) bars for children under five years with severe acute malnutrition. This research uses an experimental study with 2 replications and duplicates. This study analyzed the amino acid profile, protein digestibility and calculated the estimated value of PDCAAS (Protein Digestibility Corrected Amino Acid Score). PDCAAS is a method of assessing the quality of protein in a food product that can be done by comparing the amino acids found in food with the standard requirement amino acids and then multiplied by the digestibility of the protein. The results of the amino acid profile analysis showed that the low limiting amino acid score (36%) and the estimated PDCAAS value of the product were still low (34.2). These results still did not fulfill the RUTF product standards recommended by WHO and FAO. The results of the analysis of protein digestibility of RUTF bar product were high, which was 94.9 ± 0.2%, and fulfill the recommended RUTF product standards. It is necessary to increase the amount of cereal or animal food or whey protein concentrate or food processing using the extrusion method to increase the protein quality of RUTF bar products for children under five years who have severe acute malnutrition and fulfill the recommended RUTF product standards.
