- Abstract
The article examines the effects of sample size and texture on mastication and swallowing by measurements on human subjects who were actually eating different-sized pieces of rice cake. According to the authors, swallowing was induced when the bolus properties became suitable for swallowing, as healthy subjects could adjust their mastication technique according to the food amount and texture.
