- Abstract
Oleanolic acid and ursolic acid are pentacyclic triterpenoids widely distributed in nature. They have many biological activities, such as anti -inflammatory, anti -virus, anti -tumor, anti -oxidation and liver protection. They are effective components of many plants. In this paper, the latest research progress and results of extraction, separation and determination methods of oleanolic acid and ursolic acid in recent years were summarized, which would provide more scientific basis for the preparation, detection and development of related foods of oleanolic acid and ursolic acid in the future.
