- Abstract
INTRODUÇÃO Formulações para nutrição enteral enriquecidas com gorduras monoinsaturadas são recomendadas para limitar a ingesta de gorduras. Não é novidade que a literatura recomenda esforço conjunto para diminuir a proporção de ácidos graxos ômega-6 e ômega-3 na dieta, visando a proporção de 4:1, uma vez que aspectos dietéticos de longo e curto prazo encontram-se relacionados, por exemplo, à mortalidade por doenças crônicas. Outrossim, são escassos os estudos voltados à análise da real composição de ácidos graxos de fórmulas especializadas em nutrição. Portanto, este estudo tem o objetivo de analisar perfil e qualidade nutricional dos ácidos graxos de formulações enterais industrializadas, comparando com a informação alegada pelos fabricantes. MÉTODOS Trata-se de um estudo analítico, conduzido de dezembro de 2020 a março de 2021. Dez formulações nutricionais enterais líquidas foram adquiridas no mercado local e liofilizadas. Inicialmente, foi realizada a extração do e determinação do lipídio conforme Parnell (1899) e Bligh & Dyer (1959). Posteriormente, realizou-se a derivatização de ácidos graxos em ésteres metílicos de ácidos graxos (FAME) conforme método de Santos et al. (2014). A fase orgânica foi coletada, seguindo-se com as análises cromatográficas em cromatógrafo em fase gasosa acoplado ao detector de chama (GC-FID) Thermo Scientific TR-1310, equipado com coluna TR-FAME (120 m de comprimento, 0,25 mm de diâmetro interno e filme de 0,25 µm) e detector de ionização em chama, operando em modo split, com fluxo de 120 mL min-1 . Os FAMEs foram identificados pela comparação dos tempos de retenção entre os constituintes das amostras em relação ao padrão de ésteres metílicos de ácidos graxos (Supelco® 37 Component FAME Mix, Sigma Aldrich, St. Louis, EUA). A área dos picos foi determinada por meio do software Chromeleon 7 e os resultados expressos como porcentagem de área relativa (%). Os dados foram analisados usando o software Microsoft Excel® 2013 e posteriormente o SPSS 25.0 (IBM Armonk, NY), por meio de Teste T de Student com nível de significância de 5%. RESULTADOS Três formulações apresentaram teores de lipídeos abaixo, variando de 1,15-1,85 vezes em relação ao rotulado, sendo a diferença significativa para uma formulação (p<0,05). Cinco amostras apresentaram quantitativos de ácidos graxos saturados acima do rotulado, com variação de 2,65 até 10,36 vezes. Destas, para duas não houve significância (p >0,05). Em cinco formulações não foram identificados valores de EPA e DHA, mesmo que em todas alegava-se a adição de óleo de peixe e a existência destes ácidos graxos na composição. CONCLUSÃO Foram encontrados teores de lipídio e ácidos graxos díspares ao rotulado, tal como um teor de ácidos graxos saturados superior em cinco formulações. Da mesma forma, o teor de ácidos graxos do óleo de peixe foi inferior ao alegado pelo fabricante.
