- Abstract
The article examines changes in the structure of the beef packing industry in the U.S. focusing on the period since the 1970s. It explores the shift towards fewer and larger plants and companies and the change from cash market transactions to forward contracts and other alternative marketing arrangements. It cites the role of economic efficiencies and concerns of potential market power in bringing such changes. A review of results of several studies on the behavior and performance of livestock and meat markets is given.
