- Abstract
During liquid cultivation of Polyporus brumalis, its mycelial biomass, ethanol precipitate content, polyphenol content, flavonoid content and ascorbic acid content in the fermentation broth were measured. The fermentation broth was also measured for biochemical activities including superoxide dismutase activity, total antioxidant capacity, ferric reducing ability of plasma, ferrous ion chelating ability and activities on scavenging DPPH, ABTS, hydroxyl radical and superoxide anion. Based on the results of the above experiments, the correlation between fermentation metabolites and antioxidant activities of the fermentation broth was analyzed. The results showed that during the 14-day cultivation, mycelial biomass, ethanol precipitate, polyphenols and flavonoids peaked at day 8, day 14, day 10 and day 8, reaching (7.14±1.30) g·L-1, (4.03±0.06) μg·mL-1, (59.10±3.80) μg·mL-1 and (0.94±0.05) mg·mL-1, respectively. The fermentation broth had no ferric reducing ability of plasma or ferrous ion chelating ability, but it showed antioxidant activities. There were correlations between polyphenol content and total antioxidant capacity, polyphenol content and hydroxyl radical scavenging activity, flavonoid content and DPPH scavenging activity, ascorbic acid content and ABTS scavenging activity, and ascorbic acid content and superoxide anion scavenging activity. This study indicates that fermentation broth of P. brumalis possesses antioxidant activity, and thus provides a reference for the development and utilization of this species.
