- Abstract
The origin of mills is based on the first grinding stones that the Ancient Age civilizations used to grind grains which are one of the essential nutrients. Natural energy sorts such as water and wind began to replace energy sources based on living beings as the civilizations advanced their development. The mills, which were among the oldest producing centers, also contributed to the social and cultural development of the Ottoman civilization. In this sense, the mills were very common in the lands of the empire. The travellers were the ones who witnessed to them best. Evliya Çelebi (1611-1682), who was one of these travellers, devoted a large space to mills while he was drawing a detailed panorama of the Ottoman lands in his work which is known as the Evliya Çelebi’s Seyahatnâme today. Evliya Çelebi frequently mentioned hand mills, horse mills, water mills, windmills, car mills and ship/raft mills in his travelogue. Çelebi also claimed about the woodworking sawmills, wool-spinning felt mills and iron-forging samakov mills, in addition to the classical flour mills. The milling industry in the Ottoman State will be explored through the Evliya Çelebi’s travelogue and some Western observers in this study.
