- Abstract
The article reports that since bread had become the staple food in medieval Europe and it remained so in the northern Alpine region until it was replaced by the potato in the 19th century, corn mills were vital to the population's diet. Topics include considered that they became so as a result of the profound change in agriculture that began in Central Europe in the early Middle Ages and was referred to in research as the "Agrarian Revolution", which continued into the High Middle Ages.
