- Abstract
The article offers information on oyster consumption and culture in France. The oyster is an iconic market and cultural staple in French society. The French eat nearly two kilograms of the mollusks per person per annum. They are not only the most important consumers but also produce more than 130,000 tonnes annually, of which 7000 tonnes are exported, making France Europe's largest producer and exporter. The article focuses on the Second Empire era and expansion, enrichment, and democratization of the French diet through increased agricultural production and the domestication of exotic animal species such as the oyster.
