- Abstract
The objective of this study was to evaluate microbiological of slicers to support educative activities to food handlers on good hygienic practices for equipment. The study occurred in the bakery of two supermarkets in Piraquara, Paraná, through the microbiological couting of aerobic mesophilic microorganisms (Standard Plate Count - SPC), total coliforms and Listeria monocytogenes research. Three collections were made with a 15-day interval and, before the last one, a educative activity was made based in problematization methodology about equipment hygienization. Despite the reduction in bacterial counting, verified by the CPP, the results remained above the recommended limits. There was no detection of total coliforms and in the investigation of Listeria monocytogenes. The microbiological analyses were important for the evaluation of the hygiene of the slicers, supporting effective educational practices in the learning consolidation.
