The article discusses the regulation of raw milk production and sales by U.S. states in response to consumer demand for unpasteurized milk and dairy products. Public health and food safety experts argue that raw milk presents a higher risk of foodborne illnesses such as salmonella and Campylobacter infection. Topics include safety standards for raw milk producers, community-based food systems, and the health risks of raw milk bacteria to immunocompromised people, children, and the elderly.
