- Abstract
In order to further solve the problem of adulteration in vinegar production enterprises and realize the effective supervision of vinegar production enterprises, the concept of material balance was explained from the narrow sense and the broad sense, and the basic technological process of vinegar production, the functions of main processes and the accounting elements of material balance were introduced. The import and export balance of main materials in the production process and the biochemical reaction balance of carbon in the fermentation process were described, and the formula of total carbon conversion rate was abstracted. The quality and safety supervision model of material balance method in vinegar production enterprises was constructed with the self-inspection by enterprise and on-site inspection by regulatory authorities as the main scenes. This review provided reference for the establishment of traceability system and the exploration of new supervision mode in the vinegar production process.
