- Title
Bivalve Mollusks: Control of Microbiological Contaminants.
- Authors
Larkin, Edward P.; Hunt, Daniel A.
- Abstract
Voluntary cooperation between the shellfish industry and government agencies has reduced the incidence of shellfishborne disease. Contamination of bivalve mollusks by bacterial pathogens, viruses, and toxin-containing phytoplankton is controlled by harvesting shellfish only from approved waters and by the use of sanitary food-handling practices.
