- Abstract
Casein(CN) is mainly found in the milk of mammals such as cows, sheep, camels and humans. It exists in four subtypes of αs1-CN, αs2-CN, β-CN and k-CN, which are composed of α-helix, β-sheet, and β-turn and suspend in the form of micelles in water. With high nutritional value, CN has a stable chelating system and is easily hydrolyzed by protease into small molecule active peptides, thus being widely used in food,medicine, and other fields. This article reviewed the structural characteristics, source content, and application fields of CN,providinga reference for the further application of this protein.
