- Abstract
In this study, the coagulase and DNase enzyme activities and methicillin resistance characteristics of S. aureus strains isolated from Urfa cheese samples sold in Istanbul and Şanlıurfa were determined. S. aureus strains isolated from cheese samples by using Baird Parker Agar containing egg yolk tellurite were tested for coagulase activity using rabbit blood plasma, DNase activity and methicillin resistance using DNase and Orsab agars. A total of 52 Urfa cheese samples were analyzed. Mean S. aureus load was 4.48±1.76 log cfu/g in 48 (92%) samples and only 25% of the samples were in good accordance with the limit imposed by the Turkish Food Codex. Of the 64 S. aureus isolates, 22 (34.4%) were coagulase positive, 31 (48.4%) were DNase positive, and 20 (31.25%) were resistant to methicillin. Results indicated that Urfa cheese samples may have high enterotoxin producing potential and methicillin resistant S. aureus isolates, so consumption of these cheeses could threat public health.
