- Abstract
The article discusses the study that evaluated the process of convective drying, based on bioactive compounds in nopal samples prior to and after dehydration, as well as the determination of total polyphenol, flavonoid, flavonol, carotene and ascorbic acid contents in samples that were undehydrated and dehydrated. The study showed that the drying temperature of 45 degrees Celsius was the best condition for bioactive compound preservation.
