- Abstract
The article presents a study which examines the potential use of successful small upper segment culinary restaurant owners (SSUSCROs) in hospitality management education. The study constructed theory from empirical data using grounded theory methodology, and conducted interviews with a business connoisseur, four Dutch restaurant owners and six retired. It states that the connected narrative and model inform future practitioners on how to prepare future ventures in culinary restaurant industry.
