- Abstract
The article focuses on the history of the operation of the livestock and meat processing industries in the U.S. during the 19th century. It says that the transportation of the meat and livestock products began with the opening of the American West after the Civil War, in which cattle were loaded into railcars and transported to Eastern markets. It states that the demand for beef grew, wherein people in the Europe also wanted American beef which led to the overseas shipment of live cattle and salted beef. It also mentions that refrigerated freight cars were made to ship processed meat across the U.S., in which processing meat products before the shipment reduces the weight and cost of shipment.
