- Abstract
In order to explore the drying process and quality of fruits and vegetables based on the light-following-photovoltaic drying oven, the fresh fruit and vegetable products such as fungus, shiitake mushrooms, jujubes, persimmons and walnuts were selected and tested using a light-following-photovoltaic solar drying process, and the drying process was optimized by a combination of two orthogonal rotation experiments and a comprehensive quality scoring method. Under the conditions of temperature(45±5)℃,humidity(40±10)%(RH) and solar irradiance(700±300)W/m² ,the fungus, shiitake mushrooms, jujubes, persimmons and walnuts (their initial dry basis moisture content was 4.21,4.00,2.03,1.00,0.33 g/g),respectively, they reached the product drying quality requirements at 28,40,36,40 and 32 hours, and the drying quality can better meet the relevant national standards for product quality. The drying process has high efficiency, is energy-saving and environment-friendly, and has good application prospect.
