- Abstract
The present study was reviewed on utilization of potatoes and peels with their benefits and the effects of the extracts on application in fish processing. Potatoes are one of the most commonly consumed vegetable throughout the world. Peels are found as major by-product of potato processing industries that represent a major disposal, sanitation & environmental problem. To promote awareness and sustainability by upgrading this by-product, it has been used in fish mince, oils to enhance their shelf life. Potato peel extract had been used in mince of horse mackerel as a natural antioxidant as it have high levels of n-3 PUFA. It is used as an antioxidant as it has been a good source of dietary fibre (40%) called "resistant starch". It is rich in phenolic acids such as Chlorogenic, Gallic, Caffeic acids etc.
