- Abstract
The article presents the study investigating the action of catabolic genes of Bacillus subtilis Natto in pinitol (PI) depletion in natto, food made from fermented soybeans. Results of the study showed that by inactivating the myo-inositol catabolic genes, PI consumption might be prevented; thus retaining the health-promoting properties of the food.
