- Abstract
The study was to compare the slaughter performance, meat quality, muscle fiber properties and fatty acid content of Guizhou yellow chickens with high and IMF content. Thirty female Guizhou yellow chickens in the same rearing environment were selected and slaughtered at 120 d, and the intramuscular fat content, slaughter performance, meat quality, fatty acid and muscle fiber characteristics of chickens were determined. According to IMF content, they were divided into high IMF group and low IMF group (IMFH group and IMFL group). The results showed that the abdominal fat rate of chickens in IIMFL group was extremely higher than that in IMFH group (P<0.01), and the shear force of pectoral muscle was extremely higher than that in IMFH group (P<0.01). A total of 23 fatty acids were detected in chest muscles of IMFH group and IMFL group. The content of unsaturated fatty acids in IMFL group was significantly higher than that in IMFH group (P<0.05), and the content of linoleic acid and arachidonic acid were significantly lower than those in IMFH group (P<0.05), and the amount of arachidonic acid was extremely higher than that in IMFH group (P<0.01). The muscle fiber diameter of the pectoralis muscle in IMFL group was extremely higher than that in IMFH group (P<0.01), and the muscle fiber density was significantly lower than that in IMFH group (P<0.05). The study indicates that Guizhou yellow chicken has high intramuscular fat content, better meat quality, rich saturated fatty acid content, dense muscle fibers, and excellent meat nutrition and taste.
