Preparation optimization of plant stanol ester power with response surface methodology.

- Abstract
Investigating the preparation process of plant stanol ester power to meet the development of medicines and functional foods. On the basis of single factor experiment, the effects of five factors (solid-liquid ratio, silica ratio, casein sodium ratio, maltodextrin ratio and inlet air temperature of fluidized bed) on preparation process of plant stanol ester power were investigated. Then, the significance of five factors was investigated by Plackett-Burman experiment. Finally, three significant factors (solid-liquid ratio, silica ratio and maltodextrin ratio) were optimized by Box-Behnken experiment. The optimal conditions of the powder spraying process were: solid-liquid ratio was 51.30%, the silica ratio was 4.05%, and the maltodextrin ratio was 15.02%. Under this condition, the yield of plant stanol ester power was 87.04%, the sterol content in the power was 64.12%, which had a high coincidence with the predicted value of the model (87.281% yield of plant stanol ester power, and 64.1525% sterol content in the power). The plant stanol ester power had good fluidity and low moisture absorption, and can be used in functional foods and medicines.
