- Abstract
The article presents a study about the effects of microbial ecosystems at food-processing plants on spoilage-genes and in turn, on food spoilage. The study, conducted using a Bayesian model, at a beer brewery explores topics like spoilage-gene frequency, fungal and bacterial communities in a brewery, microbial transmission, and hop-resistance gene frequency.
