- Abstract
The included examples of foodomics studies of metabolites illustrate how NMR spectroscopy, as a non-selective technique, can provide important wide-ranging information on bioactive metabolites or constituents in food resources. Increasing awareness and attention to the efficient utilization of raw materials and resources is currently highly prioritized to attenuate the climate footprint of agriculture and food production. The reported studies also witness that NMR spectroscopy frequently is superior to other techniques in terms of allowing analysis with minimal sample preparation and rapid analyses.
