- Abstract
The article presents a study on the isolation and selection of lactic acid bacteria as biocontrol agents for nonacidified and refrigerated pickles. The researchers used a nonacidified, deli-type pickle product as a model system to study the potential utilization of the biocontrol as a method for preventing the growth of pathogens in minimally processed fruits and vegetables. The study found that a Lactobacillus curvatus isolate has desirable characteristics as a biocontrol culture.
