- Abstract
The total volatile basic nitrogen (TVB-N) content is an important index to evaluate the freshness of meat. A beef viscoelasticity detection system was designed to investigate the prediction ability of airflow and multi-point laser technique for nondestructive determination of TVB-N content in beef. The detection system obtained the deformation information of 65 beef samples, in which the TVB-N content ranged from 10.50 to 35.01 mg/100 g. The different pretreatment methods were adopted to pre-process the displacement information. Synergy interval partial least squares (Si-PLS) and backward interval partial least squares (Bi-PLS) were used to screen the interval variables of original information and different pretreatment information. The principal component regression (PCR) and partial least squares regression (PLSR) were used to establish the relationship between displacement information and TVB-N content reference value. The results showed that the best and simplest prediction model was established when Bi-PLS was used to screen the interval variables of deformation information. The corresponding Rc and RMSEC were 0.947 and 1.800 mg/100 g, respectively; the Rp and RMSEP were 0.947 and 2.252 mg/100 g, respectively. This study provided a new method for the nondestructive detection of TVB-N content in beef.
