- Abstract
The article presents a study which evaluates the degree of elasticity (DE) and the mechanical properties of wheat kernels including bread wheat, soft wheat, and durum wheat. The wheat kernels were tested for uniaxial compression and stress relaxation tests which showed force-deformation curves exhibiting two points of inflection (PI). The study concludes that PI regions presented high DE but was reduced in the endosperm region.
